Makes 6-8 servings
Ingredients
1 (11 oz) can of mandarin oranges, drained
1 pint fresh strawberries, stemmed and quartered
1 small red onion, thinly sliced
1/2 cups coarsely chopped pecans, toasted
1 avocado, sliced
1 10 ounce package of romaine lettuce or spinach leave
Combine first 6 ingredients in a large bowl. drizzle with hald of Vinaigrette, tossing to coat. Serve remaining vinaigrette with salad
Cinnamon Vinaigrette:
1/3 cup olive oil
1/3 cup raspberry vinegar
1 Tbs sugar
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. pepper
1/2 tsp. hot sauce
Prep.
Combine ingredients in a jar. Shake to incorporate. Chill at least 2 hours. Shake well before serving.
